Zucchini Stew



  1. 2 large zucchini, cut in large cubes
  2. 2 green or red peppers, cut up
  3. 2 onions, chopped
  4. 3 medium size tomatoes, peeled and sliced
  5. 1/4 c. oil
  6. 1 can green beans, drained


  1. Heat oil in large saucepot; add zucchini, peppers, onions and tomatoes.
  2. Cover with lid.
  3. Do not add water as water cooks out of zucchini.
  4. Cook until zucchini is soft, about 1 hour.
  5. Add green beans last.
  6. Especially good served with cooked smoked sausage or ham.
