Judy'S Vegetable Tortellini

Ingredients

  1. 1 bag frozen chopped onions
  2. 1/2 tsp. minced garlic
  3. 2 Tbsp. oil
  4. 2 Tbsp. butter
  5. 1 lb. pkg. creamed spinach, softened
  6. 1/2 c. Parmesan cheese
  7. 1/2 c. Romano cheese
  8. 1 lb. box dry tortellini
  9. 1 pt. heavy cream

Directions

  1. Saute onions and garlic in butter and oil until transparent. Add spinach and heavy cream.
  2. Simmer; throw in cheeses.
  3. Stir and shut heat off.
  4. Make tortellini according to directions on box. Mix all ingredients when tortellini are tender.
  5. Serve hot.
