Carrot Coins(Microwave)

Ingredients

  1. 1 lb. medium-sized carrots, peeled and cut in 1/4-inch rounds (2 1/4 c.)
  2. 3 Tbsp. water
  3. 2 Tbsp. finely chopped fresh parsley or 1 Tbsp. dried
  4. 1 Tbsp. butter or oleo
  5. 1/4 tsp. ground ginger
  6. 1/4 tsp. dried tarragon, crumbled
  7. 1/8 tsp. garlic salt
  8. 1/8 tsp. pepper (preferably white)

Directions

  1. Mix all ingredients in a 1-quart casserole.
  2. Cover with lid or vented plastic wrap.
  3. Microwave on High 6 to 8 minutes, stirring twice,
  4. until carrots are almost tender.
  5. Let stand 3 minutes or until
  6. tender.
