Lemon Fluff Jello



  1. 1 (3 oz.) pkg. lemon Jell-O
  2. 1 c. boiling water
  3. large can crushed pineapple with juice
  4. 8 oz. cream cheese
  5. 1/2 c. sugar
  6. 8 oz. Cool Whip
  7. 1/2 c. chopped pecans (optional)


  1. Mix pineapple and sugar in saucepan and bring to a boil. Reduce heat and simmer on stove 15 minutes.
  2. Remove from heat and cool.
  3. Mix Jell-O and boiling water.
  4. Stir in softened cream cheese and mix well, then add pineapple and nuts.
  5. Chill until thickened, then fold in Cool Whip.
  6. Put in Pyrex dish and chill until firm.
