Taco Salad

Ingredients

  1. 3 lb. ground beef
  2. 2 c. chopped onions
  3. 1 c. chopped celery
  4. 1 c. chopped green bell pepper
  5. 3 Tbsp. cumin seed
  6. 3 cloves garlic, minced
  7. 4 tsp. chili powder
  8. salt and pepper to taste
  9. 8 oz. Velveeta cheese, shredded
  10. 1 (10 oz.) can Ro-Tel tomatoes
  11. 18 c. chopped lettuce
  12. 8 tomatoes, chopped
  13. 1 (16 oz.) pkg. corn chips, crushed

Directions

  1. Combine first 7 ingredients in crock-pot; mix well.
  2. Add salt and pepper.
  3. Cook on low for 3 to 4 hours or until done to taste. Heat cheese and tomatoes in saucepan until cheese melts, stirring constantly.
  4. Layer lettuce, ground beef sauce, tomatoes, cheese sauce and crushed corn chips on individual plates.
  5. Yield:
