Coconut Macaroons

Ingredients

  1. 1 1/3 c. coconut
  2. 2 Tbsp. all-purpose flour
  3. 2 egg whites
  4. maraschino cherries
  5. 1/3 c. sugar
  6. 1/2 tsp. salt
  7. 1/2 tsp. almond extract

Directions

  1. Combine first 4 ingredients.
  2. Stir in beaten egg whites and almond extract; mix well.
  3. Lightly grease cookie sheet.
  4. Cut cherries in quarters.
  5. Drop by teaspoonful onto cookie sheet about 1-inch apart. Top with cherry.
  6. Bake at 325° for 20 to 25 minutes. Take out when edges are golden.
